Persian or Iranian cuisines are one of the oldest in the world. One of the most renowned Persian dishes includes Chelo Kabab with Rice. Chelo kabab is served with accompaniments such as butter, sumac powder, basil, grilled onions and tomatoes. Want to try it out at home?

Ingredients:
Persian Chelo Kabab
Minced beef 1/2 kg
Garlic paste 1 tbsp
Onions 2
Tomatoes (whole) 2-3
Black pepper (coarsely ground) 2 tsps
Egg white 1
Bread 2-3 slices
Salt according to taste
Persian Rice:
Sela rice 300 gms
Onions (chopped) 2
Garlic (chopped) 1 1/2 tbsps
Potatoes 2-3
Black pepper (coarsely ground) 1 tsp
White pepper powder 1 tsp
Stock as required
Saffron 1 pinch
Curry leaves 4-5
Butter 1/2 cup
Oil 2 tbsps
Salt according to taste
Pistachio (boiled & peeled) for garnishing
Method:
Preparation of Kababs: Mix together salt, minced beef, 1 tsp black pepper, egg white, onions, garlic paste and bread to make a smooth paste.
Shape the mince into seekh kebabs. You can either grill, steam or bake them in the oven.
Now in a bowl, add the remaining black pepper, salt and tomatoes. Mix well and grill the tomatoes.
Set aside the kababs and tomatoes.
Preparation of Rice: Add oil and curry leaves in a pan.
Now add rice and stock and bring it to boil until it’s half cooked.
Strain the water and set aside.
Preparation of Masala: In a pan, add 1 tbsp oil and a little butter to fry the chopped onions and garlic.
Add all the spices and mix well.
Now add the remaining butter and oil in a pan and layer the thinly sliced potatoes at its base.
Add rice, masala and saffron in it and put it on low fire.
After it’s done, dish it out and garnish with pistachios.
Serve the rice with Chelo Kabab and grilled tomatoes. Enjoy!
