‘Pave’ means pavement or cobblestone, and a box of these truffles really does look like its namesake: a small cobbled street. Traditionally, this French dessert comes as tiny squares and their small size also makes it far too easy to eat a lot! 

Enjoy ‘Paves Au Chocolat’ with family and friends. 

Ingredients:

Movenpick chocolate (Noir, 72% Cacao) 0.3 kg

Sugar (crystal) 0.1 kg

Heavy cream 0.3 litres

Extra Virgin Olive oil 0.1 litres

Pecan nuts 0.05 kg

Chocolate powder (dark) 0.025 kg

Chocolate powder (light) 0.025 kg Matcha (green tea powder) 0.025 kg

Method:

Melt the chocolate with cream and sugar in a bain-marie, then add the olive oil and beat till smooth.

Chop the pecans and stir into the mixture. Then pour mixture into a square tin lined with cling film, cover with foil and leave to cool.

Take out the tin, remove the cling film and foil, cut in to 2-3 cm cubes and press one side of each in the Matcha, cocoa and raw cocoa.

Serve one of each variety with coffee.

This recipe makes approximately 50 pieces.
