Not in a mood to prepare the same old dishes at home but want to have something fulfilling at the same time? Why not have some salad? You may be thinking that salads may not fill you up that well.
Try this amazing and light recipe for Chicken Macaroni Salad.
Ingredients:
Elbow macaroni (cooked) 16 ounces
Chicken breast (boiled and cubed) 1 lb
Pineapple chunks 1 1/2 cup
Spanish onion 1 cup
Raisins 1 cup
Hard boiled eggs (chopped) 3
Mayonnaise 1-2 cups
Miracle whip 1
Cheddar cheese (cubed) 1 1/2 cup
Salt 2 tsp
Pepper 1 tsp
Method:
Cook the macaroni as directed on the package and place it in a large container.
Add the mayonnaise. You can either add only 2 cups of mayo, or a cup of mayo with a cup of miracle whip. Then mix well.
Add in minced onions and mix well, then add the cheddar cheese and mix again.
Now, add the chicken and distribute it evenly. Add in the pineapple chunks, boiled eggs, and raisins and mix well.
Season it with salt and pepper according to taste.
Chill inside the refrigerator for about an hour and serve chilled.
